As it's World vegan day and the start of World vegan month here's a nice simple but filling chickpea and vegetable soup made with left over veggies and some chickpeas lightly cooked in olive oil on top. I cooked the chickpeas in olive oil with some ginger and the soup I added nutritional yeast and some Meridian gluten free yeast extract for extra flavour and nutrition.
I often cook chickpeas like this and have them instead of croutons as they are naturally gf and really tasty toasted or lightly fried.
This is both gluten free and vegan and its healthy...π
Your Chickpea & Vegetable Soup looks really good! I love the fact there is ginger in it too - I am a great fan of ginger - I have some ginger root in the fridge (which is now making me wonder if I should keep it there or outside - do you put ginger root in your fridge?)
I've not tried lightly fried chickpeas before - I might give them a go.
Thank you Zest, I know that you like ginger too, I keep it in the fridge and make sure that the ends are dry after cutting before putting back in the fridge. Cling film helps to keep the air from the root which can help when storing, or a sealable poly bag will do.
Crispy chickpeas are gorgeous in my opinion and pack a nutritional punch. π

Hi just joined this group as desperate to lose weight. I am a busy mum with a nightmare family to feed. 1 wheat free, 2 dairy and nut free, 1 man who eats whatever! Poor husband gets annoyed as I lose interest in cooking different meals by the time I've worked out who is having what. He grows fruit and veg at allotment and in garden so I try to make things interesting with what he grows. I'm doing butternut squash soup today and your crispy chickpeas look fab so going to try that as wheat free child loves them! Thank you - exhausted superman!
