Here's what I had for dinner tonight its a thick creamy carrot with onions mushrooms a tin of tomatoes and coconut cream with coriander pepper and a little nutmeg.
Instead of croutons I diced a potato in its skin and lightly cooked that in a little olive oil and just put that on top of the soup with a little dried coriander.
This is gluten free and plant based and it went down a treat as its not exactly the heat wave we had this time last year. βοΈ

Thank you I used about 1/2 tea spoon ground coriander and just a pinch of black pepper and itβs spicy enough for me but you can always give it more bite. π
Now that's a soup and a half. Corned beef hash for us tonight with added curry powder, butter beans and marrow fat peas. Like you say not a heatwave so the tummy calls for warming food.
Perfect Jerry, I always try to find alternatives to put in my soup as I cant stand gluten free bread, I usually use nutritional yeast or crisps but your ideas are much better
Hello Freedom57 I blended some par cooked carrots and added that to onions and mushrooms lightly cooked in a little olive oil then added a tin of plum tomatoes and a tin of coconut milk with 1/2 tea spoon ground coriander a little black pepper and a pinch of nutmeg. I only blended some of the mushrooms and onions and then just cooked it gently in a saucepan.
The dices potato I just washed the potato diced it and added that to the soup when the diced potato was cooked and crispy.
