Hi everyone, here's what I made for dinner tonight its a simple curry with red lentils which I cooked first then I added them to onions tomatoes peppers and garlic lightly cooked in olive oil. I mixed some rice flour with cold water and added that and topped up with a can of coconut milk and some mixed frozen veggies.
It was really easy to cook as well and I like that its gluten free and plant based so ticks the free from box too.
Enjoy your weekend and stay safe and well folks. π
Whether it was on offer or not I'm sure it's very nutritious. I'll definitely treat myself to some sometime. Thanks for posting
That looks delicious Jerry and what fabulous ingredients. I'm going to have to copycat that one.
Enjoy the rest of your evening.

Hi now that is a lentil picture I was pleasantly surprised to see lol πvery interesting colours and how long did you cook the lentils for if in a pan as I mentioned we try to eat them and other legumes but some are hard for us to digest, I think mam's making the mistake of mixing them as some are harder to cook I read about black rice and is for reducing inflammation too so hope to get some when get to a supermarket were just going to herons freezer shop for cat food and few bits as won't be many in hopefully, and I noticed you used the froze mix veg mam loves thatπI made a quick curry last night with raisens and cashew nuts and box of microwave frozen chips lol π€π

Hi Mandy I just cook them on their own and then add them to the curry mix, I use frozen veg as you can have a bigger variety and theyβre easy! Some legumes are best soaked in water overnight to make them easier to digest.
Your curry sounds lovely as curry and chips is a magic combination. π
