This is what I had this evening it's a soup made with winter veg quinoa red lentils ginger, I cooked some onion and garlic first to slightly caramelise, while the quinoa and lentils cooked and the veg were in another pan until the were all just cooked then added together and left to cook in some stock made with gram flour bouillon and yeast extract.
Instead of croutons I cooked some diced new potatoes in some olive oil until they were crispy and had them on top and it was a nice simple meal.
This is gluten free plant based and wholesome...π
Thank you for saying that! I usually have hummus for dinner once a week, but since I will have dinner later than normal today, I thought it would be a good thing to have for lunch this time instead.

Frozen winter veg,
Quinoa red lentils,
1 onion clove of garlic dried ginger

For the stock, 1 desert spoon of gram flour in a little cold water mixed to a thick paste then add (the water the veg cooked in) with a tea spoon of low salt bouillon and a little yeast extract.
Instead of croutons I cooked some diced new potatoes in olive oil until they were crispy and had them on top and it was a nice simple meal.
