It's definitely soup weather and I made this easy soup by lightly cooking a diced onion with garlic in a little olive oil then I added ginger cumin coriander turmeric nutmeg and black pepper with some frozen stir fry veg a tin of organic green lentils. I added a couple of teaspoons of gram flour with some cold water mixed to paste and added that to thicken it or I would used coconut milk or cream. I cooked it very gently over a low heat.
This is gluten free plant based and low carb and it still packs a nutritional punch and I like that. π
