Here's what I made for dinner today as I wanted some comfort food as like many we have had more than our fair share of rain today. ☔️
I had some sweet potatoes which I cooked in boiling water, I also heated some olive oil in another saucepan and softened a chopped organic onion with garlic ginger and black pepper and left it until the sweet potatoes were cooked and mashed then I added it all together with some water and some low salt bouillon and cooked it through.
I opened a can of organic black chickpeas and cooked them in some olive oil until they were crispy and had them with the soup instead of croutons, so this is gluten free plant based and low carb and still packs a nutritional punch.
That looks and sounds delicious Jerry. You are so right, it's now time for comfort food 😁. Think we're all going to end up having to swim our way round soon with all this rain.🏊♀️💭😉

This looks really good, Hidden . Sweet potato is one of my favorite foods. I actually had a sweet potato on the side with my dinner last night when I had gone out. Really good and is lower in carbs. than the regular ones.
Oh, yes, but you have to see what you put on them. If you eat them just plain with butter/margarine, then they are 24 carbs.. If you put other items on them, then the carbs. go up slightly.
