This is what I made in my slow cooker for dinner tonight and being a curry it made my home smell nice.
I diced onion added that with some water with a table spoon of gram flour dissolved in it with a tin of coconut milk and added the veg which were frozen and some black beans with curry spices including paprika and Thai sweet chilli sauce as that has a nice bite to it ands adds flavour.
The red rice I just washed and cooked until nice and soft I really like red rice. Its really easy preparing something then just leaving it cooking gently away and I enjoyed it a lot.
I enjoyed salmon, tuna and rice along with swede chunks for my lunch today!

I love slow cooked dinners Jerry! All the flavours have plenty of time to blend and the big pay off is that you can start nice and early and just when you feel you don't want to do any more for the day.... dinner's ready! Your curry looks absolutely delicious and frankly I'm going to love anything with coconut milk in, but in curries it's a marriage made in heaven! Bon appetit!

We had coconut sauce for a curry dinner during the week with tofu and brown rice recently. The sauce was on top of the rice and tofu so everything could be drizzled with it. Really good.
Thanks, Hidden . We try to have the tofu/coconut curry with rice once every week, but it depends on if we have the curry in the house or we have to get extra jars ordered/picked up. We really enjoy it.
Hey thanks MadBunny I was sceptical but saw others meals and realised how useful it can be to prepare a meal and then just let it cook gently away making your home smell nice and then meal time you just lay the table. Hey your welcome as you will see our star zest uses her slow cooker a lot and yo great effect.I think that with frozen veg and meat you could prepare some healthy nourishing meals with minimum effort and let the cooker do it’s stuff.
