Since there was a leftover Vegan/Vegetarian hamburger from last night's dinner, I decided to have that with some of the leftover 3 colorful coleslaw and add some Ranch dressing and Dip on the coleslaw to mix together. I also had some sweet pickled relish and mustard on the burger-- no bun. For dessert, I had a Greek blueberry on the bottom yogurt. The total amount of carbs. without a bun is 37. Everything was really good and I enjoyed it. Very low carb. and high protein.

Sometimes the leftovers are better than the original. That happens with stews, I find.
Yes, that's exactly how it was today-- better taste than last night because everything I had blended/melted in overnight while in the refrigerator.
Glad you enjoyed your leftovers Leah. I made quite sure today that there would be leftovers for tomorrow as it's really good to have a meal that's ready in five minutes, once in a while.

We had a very plainly roasted chicken. (With O'Neil being from the Caribbean some of our chickens end up quite spicy), with a large mixed salad with home made ranch dressing and some tiny salad potatoes. There's some of everything left and heaps of the chicken, so I'm thinking that I'll use some in a curry tomorrow and at the same time turn the last of it into soup and freeze it for another time when I need something quick! 👍😃
That's a wonderful idea for either chicken soup or curry in the next few days/weeks as leftovers.
Here today was a vegetarian day which involved a quorn and root veg stew for dinner which was filling but enjoyable, egg sandwiches for lunch and scrambled eggs and mushrooms for breakfast as well.
We still have some leftovers from dinner to use for another day.
That sounds wonderful for a dinner and lunch. I really enjoy eating egg salad and other types of egg meals, too. I usually have 2 hard boiled eggs with Greek yogurt for breakfast each day.
We usually have Vegetarian/Vegan burgers at least once or twice a week depending on if we have time to prepare them.
I had a leftovers day today too, mashed potatoes with cabbage, broccoli, oven roasted garlic, and gravy, and just the addition of smoked tofu. All ready to eat within 5 minutes 🥦
This sounds wonderful. We will have tofu, rice and curry sauce and dessert for dinner tonight. For tofu, which type is your favorite ( firm, extra firm)?
I don’t necessarily have a favourite type of tofu as I tend to buy what’s available. Having said that, I prefer the softer/silken types to the extra firm, which I find too chewy.
