Leftovers For Lunch: Quiche with Rice Crust

Good afternoon everyone,

This was my leftover quiche with white rice crust and sliced mushrooms with cheddar cheese from last night's dinner. It was even better today since all the flavors melted together. I even had the leftover pumpkin spiced pudding on the side and it was better, too. I really enjoyed everything. :-)

Hey this looks and sounds great Leah and you’re right things often taste nicer the next day. It’s a great idea using rice for a gluten free crust I shall have to try this.

You can use any type of rice to do the crust. We usually use brown rice, but we ran out last time. We may try wild rice next time we have it, again.😀👍🌈

I’ve used mashed potato and carrot so will have to make a quiche with a rice crust🌈😀👍

That’s a fantastic idea!😀👍🌈

Use 2 cups of cooked rice and a 1/3 cup shredded cheese and 1 egg. Mix it together and make your crust (microwave 1 minute).

Thank you! I sometimes use fake bacon pieces, but I don’t have any right now here.

Thank you for the reply. Sorry for the delay in getting back to you this morning.

Yes, each day you have a leftover item/meal, the food is a lot better each time. I'm thinking that I should make a meal and leave it in the refrigerator for the next day instead of just having it the same day/night. But it depends on the item, of course. :-)
