Good afternoon/evening everyone. This is what I had for lunch today. Some of my lunch was from last night's dinner as leftovers.
Today's lunch was: 2tortillas, shredded cheese, Guacamole salsa, chunky tomato and vegetable salsa, black beans and a peach Greek yogurt. The entire meal was 60 carbs.. Everything was really good and had lots of protein in the meal itself. Both salsas were mild.

Thank you! I enjoy having leftovers when it's possible and try doing different combinations for them. Last night was a 7 layer dip with a Greek yogurt.
Thank you for saying that. I used the corn tortillas and put green olives inside with the shredded cheese to melt and had everything else on the side with the Greek yogurt today.
Thank you for saying that about my lunch. Yes, everything was really tasty and I'm glad we had some leftover black beans from last night. They went really well with the chunky vegetable salsa mixed together and on the tortillas.
I had a glass of water with the rest of the meal. Yes, everything was really delicious and I'm hoping we have more black beans for next week. I'd like to do the same meals next week sometime. Will have to see what can be done.

Yes, peach is one of my favorite flavors of Greek yogurt, too. I'm glad we have more for another meal/snack.
