This is what I had for leftovers from last night's dinner. I had a Pineapple on the Bottom Greek yogurt with the Vegetarian Chili at lunch. The chili had red kidney beans, plant based meat, diced tomatoes and chunky mild salsa. The entire meal was 46 total carbs.with the yogurt. Without the yogurt, the total carbs. is 30. Everything was delicious and I enjoyed it. Very low carb. and high protein. 🙂👍

Thank you for saying that about the chili. It's one of my favorite warm meals to have during the cold nights/days as leftovers/the night/day before. The meat is plant based and went really well with the other ingredients.

Hi Leah, that looks really good and is always especially tasty when it's eaten as a leftover so that the flavour has developed. Funnily enough we had chili yesterday too, but there weren't any leftovers, sad to say!So today I did a hearty soup, what the American TV cook Rachel Ray would have called a 'stoop', so thicker than a soup but not quite a stew. It was full of winter vegetables and chicken and thickened with some pureed chestnuts which I'd bought ready prepared some weeks ago (because peeling chestnuts must surely be the hardest job in the world.).
Your chili/stew/soup sounds really good and having Winter vegetables in it is even better. I don't think I've had chestnuts mixed/added to chili before, so this is a good idea to try soon. Thanks for the idea.
The red kidney beans in your meal made it nice and hearty. Your table placemat is cute I had rice and chicken for lunch and it was leftovers from yesterday.
Yes, one of my favorite types of beans for chili is red kidney beans. We always have to have red kidney beans on hand at home so we can add them each time. They also help add brightness to the chili.
