For lunch today, I tried to slightly change what I was having on the side with my cold cheese sandwich. Instead of a Greek yogurt, I substituted some leftover homemade trail mix my Niece had helped do a few weeks ago. The cheeses that I had used with the gluten free bread and mustard were: Mild Cheddar, Swiss and Muenster. Everything was really good. The total amount was50 carbs..

Thank you for the link about Trail Mix Day. I saved it so I can show it to my Nephew and Niece when they come to visit. They definitely will want to help with creating more for us all to have as snacks in the next few weeks/days. They sure like helping cook in the kitchen when they come.
It was a nice change from my regular Greek yogurt to having trail mix for a side dish at lunch. Not too many carbs. and lots of my favorite items to be used as ingredients.
