For my lunch today, I had: 2 gluten free waffles, a blueberryπ« Greek yogurt and a glass of water on the side. The entire meal was 63 total carbs.. I really enjoyed it and plan to have the waffles π§ again next Sunday with a different flavor of yogurt.

Yes, waffle Sunday and blueberry Greek yogurt for today. The blueberry Greek yogurt worked really great with the crunchy peanut butter. Itβs also for WDD(World Diabetes Day)(blue).πππ

Hi Leah, I like my own home made 'Belgian' waffles best and smooth peanut butter. It's a very occasional treat for me but my husband loves peanut butter and loves crunchy or smooth. Do you make your own waffles, or do you have a favourite brand of gluten free ones?
I have actually two types of gluten free waffles that I like to have each week. Ancient Grain and Original Waffles (Udiβs) Gluten Free waffles. πππ§

Last year when I stayed with family for several months (I went to visit then couldnβt get home because of the restrictions!) I made waffles frequently. Itβs actually my brotherβs recipe, flour, water and a pinch of baking powder. Very simple and inexpensive. It wasnβt gluten free flour but Iβd guess it works equally well with that. π₯
