Here's a nice simple risotto I made with red lentils quinoa chilli sweet red pepper onion garlic chestnut mushrooms baby tomatoes and peas. I cooked the lentils and quinoa, in another pan I cooked the onions garlic chilli peppers mushrooms ginger added cooked peas lentils and quinoa with spices and a little gram flour to thicken.
What I like about quinoa is it has little curly tails that show its cooked,
This is gluten free plant based and low carb so ticks lots of boxes with out compromise. 😊
