Quinoa and lentils with spicy courgettes and mushrooms.

Hi everyone,

Here's what I made for dinner tonight, I love quinoa and its a complete food as it contains all the vital amino acids that our bodies need. I also often cook it with red lentils as they both really compliment one another. I sautéed onions mushrooms home grown courgette and home grown tomatoes with dried chilli black pepper and ginger and just left it to cook nice and gently whilst the quinoa and lentils cooked.

Quinoa is a great grain replacement as its gluten free and I often use it instead of rice, I also grind some in my coffee grinder and use that as a plain flour.

Enjoy your evening now folks. 😊

Looks good, Jerry. I have to confess to never having tried quinoa, although we eat lots of lentils. Great to be eating your own garden produce at this time of year too!

Thank you TT, I think lots of foods are like that until we try them. Lentils are really good and I know you grow veggies so you eat well that’s the main thing. 😊

I tried Quinoa and thought it was nice.

Hey I’m a coeliac and my neighbours are gluten free so I’ll find out about her home made gluten free plant based dog food for your cat. 👍😺

Thanks I need to get pixies weight down he very active and fit loves running up down trees in park and on the roof he moves fast, lately he's been a bit faddy with his tin food and I couldn't get his usual cat biscuits I got bigger roundy ones he struggles with them he likes the rounded edges star shaped ones he just bites twice then swollows them easy. Not sure why Morrisons stopped getting them in he had lot chicken and fish last week he's probably sulking for that lol 😹 he's out playing now running from garden to garden hope he burns few calories I can see a bit of blue sky up in hull 🌥️

Thank you Hidden I’ve never had so many baby tomatoes so have enjoyed the home grown veggies. 😊

That looks yum.

I was watching a documentary about quinoa last week. Seems it's become a big hit because of its high protein levels fitting well with the veganism boom.

Landscapes and ecosystems are being destroyed as a result but the boom also brought a lot of prosperity to farmers, resurrecting whole villages and almost lost cultures - they were introducing the farmers to permaculture so that they are able to maintain the crop yields without destroying the ecosystem and so the farmers could keep the prosperity of their villages and cultures alive so it did end on a positive note :)

Thank you MintTeaMascara its an ancient food as the Inca’s marched to war eating quinoa.

I’m glad that growing more quinoa has had a positive effect on the growers. 🌈😊

Me too, it meant they could revive a lot of their dying traditions as they moved to the cities to find work

That does look tasty. We had quinoa tabouli salad tonight with zucchini soup. Good for a cool foggy night.
