Hi everyone,

Here's what I made for tonight and its cooked quinoa and red lentils with sweet peppers garlic and onion cooked in olive oil to soften then add some gram flour added some enough water so that it was dough like, I put it in a baking dish and topped with sliced onion chopped baby tomatoes sweet peppers sesame seeds and pumpkin seeds, then I baked it with a baked potato and had it with some salad.

Chick pea flour is nutritious is a great binder for egg free dairy free gluten baking so with quinoa and lentils makes it all very nutritious.

This would be really nice cold too with a salad or for a picnic as it slices well and with summer coming or thats the rumour...😊

This looks delicious. Did you invent it or did you already know the recipe?

Thanks Marijo1951, I was going to make burgers but as I was having a baked potato I baked it. 😊

I hope you won't mind if I copy it and try to make my own version later this week. I use gram flour quite a lot to make socca and I'm happy to find other uses for it.

Please do Marijo1951, I’d really like to see a photo of your socca as it sounds really good.

I've never had quinoa baked before. I'll have to see if I can find a day when it's not too hot to try it. :-) Going to have a big salad tonight for dinner soon. :-)

Hi Leah, I also use ground quinoa as a natural gluten free flour and it works really well.

Unfortunately someone has turned the heat down in the UK so it's nippy here. πŸ₯Ά

Enjoy your salad as I love salads regardless of the weather... πŸ˜€

What a delicious meal Jerry, sounds right up my street. The jacket potato is looking lovely as well - very nice. If I can find some gram flour anywhere I am definately going to try this recipe : >

I also buy their buckwheat flour and that makes great cookies and pancakes too. πŸ˜€

This looks like a lovely meal Jerry. I would enjoy that too πŸ˜‹
