I've been eating lots of quinoa mixed with lentils as I just love the combination. I came across quinoa when searching for alternatives to wheat and was pleased that quinoa is a complete food as it contains all the vital nutrients we need to live on. So is a true superfood. Lentils also pack a nutritional punch as do vegetables.
I just cooked some red lentils with white quinoa and then put into a casserole dish with the vegetables. I tend to cook an onion garlic in a little olive oil then add some gram flour to thicken add stock and just bake in the oven. π
Hi Alisongold, adding quinoa cooked to stir fries is a great way too eat it. I use it instead of rice a lot and I grind it in a coffee grinder to make a coarse flour and add that to baked items, patties/burgers are a great way of using quinoa as well.
Basically all the food we eat is broken down into 23 base amino acids and our bodies make 17 from the food we eat the remaining have to come directly from food and quinoa contains all 23 so is a complete food.
