Hi folks, tonight I had a roast with my favourite roast organic potatoes and a baked vine tom with a portobello mushroom with a avocado and cream cheese filling and I had it with steamed, peppers, broccoli and chicory.
The stuffing I made with a white onion, garlic, avocado and I gently softened them in olive oil then I added the cream cheese and some fresh coriander and baked for about 10mins with the roast. I seasoned with fresh coriander and a little black pepper.
The mushrooms I buy are exposed to the sun so that they contain vitamin D and one mushroom is about 1/2 our RDA I'm up for that LOL..
And if anyone would like to say what they had for tea and or post a photo, then please do.
Your dinner looks lovely - and I like the Vitamin D Mushrooms too. You've reminded me to let my mushrooms sun-bathe for a while before I eat them - providing we have more sun sometime soon.
I know we're expecting snow tomorrow though. Brrrr.....
Thank you Zest, I try to do that with mushrooms from other shops but tend to forget and the ones I buy are good quality and value.
I think that snow besides the sea is amazing when you see the tide melting snow as it comes in, it'll all be over soon and there'll be mayhem for a few days because it will be the wrong type of snow or too cold or something...
