Here's my Sunday roast. I lightly cooked the mushrooms to make them slightly crispy with white onion, baby sweet peppers and chilli and added cream cheese and parsley and put baby sweet peppers on top. Then I popped it in the oven with the other veggies. And I had stir fried rainbow chard with it.
Then I had apple, mango and chia seed crumble made with ground almonds and flaked almonds served with coconut cream... 😊
