Hi folks, this was supposed to be baked veggie's in a coconut milk and parsley sauce but I forgot to put the parsley in LOL.
I made a béchamel sauce using coconut milk and GF flour, so this gluten free and vegan.
I lightly cooked the veg in olive oil, I used sweet potato, red onion, fennel, garlic, chestnut mushrooms, chilli, sweet baby peppers and some Cavolo Nero. And I enjoyed it...😊
