Corn and shells with veg in sweet chilli sauce

Hi everyone,

Here's what I made for dinner tonight, its pasta shells made from corn and vegetables.

first I sautéed an onion in olive oil before adding a table spoon of gram flour to thicken before adding coconut milk sweet chilli sauce paprika and yeast extract with a little home grown fresh parsley on top.

I really like spicy food but not to hot and this is my favourite pasta its gluten free and vegan so this ticks the free from box. It's a shame the shells lose their vibrancy when cooking as they are very colourful.

I hope that you're all enjoying your day and keeping well.

Hi Hidden ,

This sounds and looks wonderful. Glad you enjoyed it for dinner tonight. I recently added some peas to a homemade Mac & Cheese and tuna meal that we had for our dinner a few nights ago. The shells looked like those of a different Mac and Cheese I had a few months back. Both types are/were also gluten free. :-)

Hi Leah, thanks for that, your Mac cheese and tuna sounds a very interesting combination with lots of flavour, so nice one. 😊

Thank you! The tuna and mac/cheese and peas are all mixed together and warmed as a leftover from a few days ago. Both with and without are really good. :-)

You're welcome! Tonight, we will have a curry with Paneer and Spinach with rice for dinner. We also plan to have dessert, but that might be Greek yogurt. :-)

It was really good! It’s one of my favorite types of curry dishes to eat for dinner.

We will have a matzah lasagna in the next few weeks and tonight, we will have another pasta meal, but my brother will order it out later today for us. I’m getting a Spaghetti Bolognese with gluten free pasta as a substitute.😀👍🍝

Hey thanks Sue, I thought that it looked a bit insipid and nearly didn't post it! But I really enjoyed it and have leftovers. 👍
