Hello, Iv lots of loverly messages about my previous endo diet and thought I’d add more meals for everyone to try!

This is my personal diet from personal experience tried and tested by me. I am a rehabilitation therapist and have studied nutrition.

Breakfast

- omelet with spinach and mushrooms.

- over night oats in a mug . plain oats in half a cup mixed with 2 table spoons fage plain yogurt and banana all mixed together in a mug (can be done in a blender I make 3 days worth at a time)

- fruit smoothie. hand full of strawberries and a banana with a spoon of fage yogurt and half fill the mug with water or milk. (Frozen fruit is cheaper and makes a thicker smoothie!)

Lunch

- tinned tune mixed with mayo and lettuce in a gluten free wrap

- chicken and bacon salad, lettuce, tomatoes, cucumbers, olives with a dressing of your choice

- stuffed pitta, gluten free pitta, lettuce, hummus and felafel. Toast the pitta in the toaster for 2 mins , microwave the felafel for 1 min (I eat these at work a lot)

Dinner

- turkey meatballs (Tesco’s) onions, chopped tomatoes, mixed herbs, tomatoes purée and courgette spaghetti.

- stir fry. Pork or prawn with mixed veg (lots of options in supermarkets)

- ovan cooked chicken and veg

Heat oli in oven and 200 when hot add raw beetroot, parsnips, carrots and courgette also any other veg you like. sweet potatoes for your carbs For one hour and the last 20 mins add your chicken in the same roasting tin.

- chilli night!

- turkey mince (it’s weird but you get used to it) onion, chopped tomatoes, kidney beans, gluten free chilli mix (cheating I know!) Brown rice takes 25 mins to cook or Tilda microwave rice

Amazing next day on jacket potatoes!! Mmmm

When I can I make meals for four people then put them in separate pots for another day it is cheaper and easier for next time. Also controls the portions sizes.

Couple of details...

I bloat badly so I am gluten free and it helps ,eat clean and avoid red meat.

I have endo in my muscle walls, womb, on my intestines.... etc I have surgery once a year to clear it up. I suffer badly with horrific pain, being sick randomly and being fatigued.

Hot water bottle is my best friend!
