Hi
Sorry to hear about the loss of your Mum
The loss of a loved one can trigger of health anxiety
I have this , sometimes I feel I cant swallow or I am drinking something & it wont go down , like its stuck
As you have seen your GP , & everything is fine , it will be anxiety even though I no it can be hard to believe

I had exactly the same after my father died.
Seven months after he went I started to get severe health anxiety.
It is a very common symptom, so much so that it has it's own name (globus hystericus). Of course this doesn't make it any more pleasant but it does appear that the first step in getting over somatic symptoms and health anxiety is to accept your symptoms as anxiety.
Being a health anxiety sufferer this is of course a case of do as I say not as I do!
