this sounds so dumb but I just cooked dinner for my boyfriend and I. We made hibachi bowls with chicken. I cooked the chicken in the pan. It was chicken breast that I cubed. Cooked in the pan for 7-10 minutes. It looked cooked. The texture was somewhat stringy which I read is normal for chicken breast. I couldn’t find my meat thermometer due to the move so I went with my gut. As I was eating I was Inspecting my bites (annoying I know) and I saw a piece that looked like it had some pink. It could have been a vein idk. The rest of that piece seemed cooked. I’m worried now that I’ll get sick or that I’ll get my boyfriend sick from the meat.
Also, the meat was packed three days ago but it said sell by the 23rd. So I’m assuming the quality was ok.

Your chicken was cooked throughout. If you cook often eventually it becomes like second nature. You can tell by the look and smell that it's cooked.
It's just your anxiety that makes you hyper vigilant. That's why you are insanely focused as you chew every bite because you didn't use your meat thermometer. So everything is going to feel "weird" or sus.
But you will be fine. You are okay and you won't be sick. And neither will your boyfriend. You know how to cook ☺️
