Hi Hiba! It's Lent for me. I'm fantasizing about Easter. I don't know much about your tradition. Is there a big food celebration at the end of fasting for you too?
Nothing special going on here. On Easter I used to make scalloped potatoes, a ham, asparagus and another vegetable. Dessert was a lemon meringue pie and whatever someone else brought. But as the years have gone by less and less people around. Don't even remember if I had a holiday dinner the last few years. Same for Christmas. Grown kids, conflicting work schedules, just don't bother. But if we can manage it I still color eggs with my son. Sometimes I go to his house. We have so much fun. Don't make any of the things you mentioned but they sound wonderful.
I still try to do a small batch. My husband helps me. I think what I miss is not having everyone around. My mother in law used to always make the pie until one year right after we go married. I made it for the first time and my husband liked it better than hers π€£ I've made it ever since. I'm sure my son and daughter in law will be happy to have me over for egg coloring.
My son and daughter know how to make them. We make them the way my Mom did. Layer thinly sliced potatoes, onions, salt, pepper, butter and grated Cheddar cheese. Sprinkle with flour. Repeat the layers then pour in milk at the end. I know a lot of people make a white sauce first but no one has ever turned down my scalloped potatoes.
We make macaroni and cheese a bit different too. Pretty much the same as the potatoes but no onion or flour. There's been an ongoing struggle with my in laws the last five years. On vacation we all chip in and get a house near the beach. They keep trying to get in the kitchen and mess with the macaroni and cheese. My husband and kids have a fit.
That's hysterical. The ongoing saga of the beach house macaroni and cheese debacle. "Who'll win this time? Stay tuned folks!" I think there's a TV deal in it.
My family usually wins. The first time it happened I hadn't gone to the shore. The drive was too much with my back. Everyone came over for my daughter's birthday. She asked for grilled chicken and macaroni salad. Since I was making macaroni I made the whole box. Half for the salad and made macaroni and cheese with the rest. I hadn't heard about it yet. Everyone got here. The macaroni and cheese was on top of the stove cooling. My daughter grabbed a fork, my son dove in with his fingers and my husband grabbed a bowl. Then after they ate they told me that my MIL had stepped in and messed with the macaroni and cheese. My husband hid the flour but she found some and added it. They were all furious and I couldn't stop laughing.
Usually when we're at the shore my brother in law cooks. He's a good cook and loves doing it. He always makes baked ziti one night. They like mine better but we keep quiet then insist on "giving him a break" and we make our macaroni and cheese one night.
This year is odd, in that all the Festivals seem to have come at once. Spring Equinox, Lent, Ramadan, Passover, Easter, they are all on at the moment. I know that it sometimes occurs with the overlap between the Lunar and Solar calendars.
