I made this pumpkin and green bean curry with lentils to thicken , sauté onions , garlic , celery , then add curry powder ( to taste ) tinned tomatoes 200mls coconut drink ( I use alpro sugar free ) 200mls veg stock , 1/2 cup red split lentils cook till pumpkin is tender ( approx 20-30 mins ), serves 4 serve with rice
