I picked up a pumpkin this year for halloween, a rather large one! In the interests of keeping food waste down, I opted not to carve it though, so I've started making a few pumpkin recipes today. Can't believe how far it's stretched!

I have pumpkin muffins, pumpkin soup and a lot of pumpkin puree to freeze for later in the year :)

If anyone has some other pumpkin ideas, I'd love to hear them :)

Hey Cooper, loving the variety of your pumpkin recipes. We didn’t have pumpkin as there is just the two of us so we use a Butternut Squash instead. Yours look absolutely delicious though. 😀👍💜

I think butternut squash has a slightly fuller flavour :)

If you're lucky, on the 1st of Nov you might find your local supermarket selling leftover pumpkins for around 10p though, and it's hard to say no to a bargain like that!

Pumpkin or squash goes nicely with pasta, especially with sage. And there’s pumpkin pie 🥧 of course 😋

I should probably try a pumpkin pie sometime - they're always talked about, but it's not something you get in the UK!

The SEEDS! They're a little fiddly to get out, but tossed with olive oil and salt and roasted in a lowish oven (325 F) and watched carefully to make sure they don't burn...goodness they are tasty!

Also, just fyi, there are different varieties of pumpkin, and the type grown to decorate the front stoop and carve are not as sweet and flavorful as the type grown to eat. In our grocery those are called pie or candy pumpkins. It's not that you can't eat the carving (bigger) ones, or that they're not good, but next year you might like to seek out the cooking type. They're perfectly decorative too :o)

I might try that next year :) I have a couple of little pumpkins/squashes to use too, so I might try a taste test 😄
