This is what I made for dinner tonight I'd wanted some quinoa flakes but my whole food shop had sold out so I bought some tri collar quinoa as I've only had red and white before so wanted to try black quinoa,
I lightly sautéed a diced onion and large beef tomato (a present from a neighbour) with diced peppers and some mixed frozen veg in a chilli sauce with dried chilli ginger black pepper and a little gram flour dissolved in. cold water to thicken added near the end of cooking.
I really like how you get these little curls when quinoa is cooked and fortunately its packed with nutrition here's a link if any one is interested:

I enjoyed it so will buy the tri colour quinoa again and hopefully some quinoa flakes soon to make apple flap jacks with. 🍏
