Here's what I made for dinner last night. First I cooked some potatoes in their skin before mashing and blind baking for approx 15 mins. Then I added a tin of tomatoes that I blended first Which I then covered in grated cheese with diced onions herbs and gluten free bread crumbs on top before baking.
It was meant to be more like a pizza but with a potato base but it turned out nice anyway and I enjoyed it and had it with a nice big healthy salad.
Thank you for the links Jerry. What a good idea to use mashed potatoes and carrots for the base of the quiche, I would never have thought of it. The meal looks very tempting.

Hi Rach the carrot and potato base was very successful so I’ll say how I get on with your base as the best gluten free pastry I’ve ever made was 1/2 gluten free pastry and 1/2 mashed potato. 👍
