Gluten free quiche with salad

Hi everyone,

Here's a simple quiche that I made today with mashed potato and carrot for the base. I cooked it earlier to have with a salad for dinner.

I bought everything in my local corner shop so it may be simple with only a few ingredients but it still hit the mark and this is gluten free and very easy to make.

Hey thanks Leah me too and I was glad I made the base with grated carrots so it could be low carb for you as it's gluten free. And I'm very pleased that I can buy these things from the corner shop, so all good πŸ‘πŸ˜€

One of my favorite types of vegetable is the carrot!πŸ˜€πŸ‘ Second favorite is cucumber mixed in with salads.πŸ˜€πŸ‘

I couldn't get any cucumber but I had carrots in the base and grated carrots...πŸ‘πŸ˜€

It's funny the little things we miss and will appreciate when this is over.

Thanks, it's a very easy alternative and it slices well, so you could use sweet potato and keep it low carb.

I imagine a lot of people are finding it hard to lose weight with the lockdown.

Thanks for the recipe. I usually use Dove's farm GF flour so I will give it a go. My wife likes to use fresh herbs, which usually come in big packs, so she chops them up and puts them in ice cube containers with a splash of water and freezes them. Instant fresh herbs as required.
