I bought this cauliflower yesterday and a bag a potatoes this morning so as we have the lockdown I made a simple meal with them both and a cheese sauce and a few GF bread crumbs on top and for a lockdown austerity meal it was very much comfort food.
The cheese roux I made with organic butter gram flour fresh milk strong cheddar cheese and sage seasoned with a little black pepper, the potatoes I baked in a little olive oil to make crisper and I sprinkled some GF breadcrumbs on top so it couldn't be easier. This is gluten free and I love using gram flour for cooking sauces.
I also baked 8 potatoes and will freeze the others for a really easy meal with a salad another day.
I'm not high risk but I don't see the point of going to busy supermarkets so I am enjoying making dishes with what I can but in one of 2 corner shops.
I will have to get some eventually after the next few days.ππ
That does look good - you're quite the gourmet on the quiet, aren't you, Jerry?! I think you have just the right attitude for these days of lockdown. I'm not classified as at risk either but I see no point in going out and putting myself at risk, not to mention other people. I will have to go out this coming week for meds for me and cat litter for the cats, but it will be my first time out of the house in more than a month, so I don't think anyone could accuse me of not taking it seriously enough!
Yummy. That cauliflower cheese looks one of the best I've seen. I think the GF breadcrumbs might be part of it.

Hey thanks Hidden thats very kind of you. I think that you are very wise I do venture out but only to my local shop and I can walk home avoiding any other peoples homes so it's not like being in a busy city.
I agree that breadcrumbs give added colour and texture to a cauliflower cheese also gram flour gives a pleasing colour so thank you again your comments are very much appreciated.

Thanks Hidden i just melt the butter and add gram flour like I would any plain flour it's very easy just keep stirring to keep it smooth. π
Good to know gram flour works, I generally use cornflour with my oat milk which although nice and creamy isnβt like a good old fashioned roux. Cauliflower cheese is one of my favourites so will be trying it soon π
Before lockdown, I mostly ate lunch at OAP clubs etc. - so I had not cooked for a while.
My microwave has a "crispy jacket" program, which produces nice jacket potatoes in less than half an hour, so, most days, I have had three jacket potatoes with butter and cheese, and boiled fresh vegetables. (...and a raw carrot or two while it is cooking).
