Here's a slice of home made gluten free quiche that I made, I saw this recipe in Bette Hagman's gluten free recipe book.
First cook potatoes then mash with a little butter and milk season spread into. casserole dish and blind bake in an oven until slightly crispy.
While this is baking mix the quiche mix. I gently softened white onions, sweet red and orange peppers, baby plum tomatoes, and then I grated some strong cheddar cheese and mixed with 3 large eggs and the same quantity of milk. I use goats milk as I find it easier to digest.
Then back in the oven until the top is set and golden, approx 30 mins.
It made a very nice lunch and is very versatile when cold so it's great for when away from home. Another thing you can do is make individual quiches in ramekin dishes to have a low carb ones and for on the move. π
