Hello everyone, here's a picture of a potato pancake that I made using grated potatoes, the advantage of using grated potatoes is they cook fast and the outside is crispy so they are the ultimate in comfort food.
I see pancakes as fast food and I had this with some home made carrot and coriander soup as its nice to have something other than bread with soup.
For the pancakes I made enough for 2. I used 2 med potatoes grated, 1 egg, a little plain gluten free flour (I'm a coeliac) just enough to make a thick batter added some chopped coriander and grated some strong cheddar cheese and mixed to a batter. I tend to leave a batter in the fridge for a little while before cooking then just cooked it gently in a little olive oil so here's a picture.
