Here's what I made for dinner tonight with green lentil penne, its gluten free and vegan.
I sautéed onion lots of baby plum tomatoes and diced mixed peppers in a little olive oil to soften then I added a table spoon of gram flour and mixed that with the olive oil then gradually added some cold water butter beans red lentils broccoli I seasoned with low salt bouillon paprika and ginger and then baked for approx 35mins @15OC I scattered a few pumpkin seeds on top as they add a nice healthy crunch.
Using gram flour is a really easy way to make a sauce thats gluten free and plant based so it's very useful and healthy.
Hi Jerry looks lovely I'm glad your eating pasta again I remember a while ago you discovered it I'd be tempted to put grated cheese on lol have you thought about making your own pasta can get a machine and put the frozen spinach cubes in it when roll it out it's very easy I think it would be quite very therapeutic too I'm not hungry yet as too hot but having home made chips and salad 😁🌄
Microwave potatoes then fry in frying pan cold pressed rapseed oil

Looks and sounds delicious. Thanks for the recipe. I thought green pea penne was hard to find. You've just proved it isn't. Although I've seen similar pasta on Sainsburys website. I'll go and buy some and try out your recipe. Like you, I'm not vegan. Fortunately, I don't have any food intolerances either. (Well, I can't seem to keep raw sweet peppers down but that's a very new development. I'm ok with them cooked.)
