Here's what I made for dinner tonight. I cooked some quinoa, red lentils, white mushrooms, onions and tomatoes. They were caramelized in olive oil, then I added some gram flour to thicken grated cheddar cheese milk. Then, I added the quinoa and lentils and mixed with some coarsely grated cooked carrots and baked it with gluten free bread crumbs on top. I added 3 odd parsnips from my freezer.
Lots of nice healthy ingredients and nice and filling so perfect for a Sunday afternoon in lockdown.

I have some quinoa and wanted to do something different so must try this. You say you cooked the quinoa first and lentils so do you cook separately on the hob till fully cooked? How long and what temperature do you cook for in the oven please? Since being on my own and in illhealth my cooking has been very spasmodic but fed up with ready meals. Thanks
