Gluten free quinoa and raisin cup cakes

Hi everyone, here's some cup cakes I made earlier and I used ground quinoa and GF self raising flour, I grind my own quinoa as quinoa flour is expensive and harder to come by so its a quick whizz in my coffee grinder. I also put a little boiling water onto the raisins and put in the microwave for 2 mins with a pinch of nutmeg, this makes the fruit softer and helps to stop it sinking.

Here's the recipe:

110G Self raising GF flour

55g ground quinoa

110g butter

2 large eggs

100g brown sugar

150g dried raising

1 t/s baking powder

Pinch of mixed spice

Whiz it all up in a food processor and put in a muffin tray and baked for approximately 15 mins 175C until cooked through.

They are best served with a nice cup of tea, enjoy the rest of your day folks and stay safe now. 🌈😊

They look really good Jerry and what excellent ingredients, adding quinoa is good. Not only are they tasty they have extra protein in them.

Thanks Alicia they’re a healthy treat in my opinion as quinoa is a complete food so has all the nutrients our bodies need.

They really are Jerry and quinoa has a lot of benefits and that's the reason why I'd rather eat that than any kind of pasta etc.
