Hi everyone.
Here's a photo of my home made gluten free white bread made with white GF bread flour and ground quinoa. The ground quinoa is a coarse grain so absorbs moisture well which's great for GF bread making and it adds protein which also helps.
Quinoa is a complete food so is a great addition to our diets. I add seeds as I really like them and they add extra nutrition, sesame seeds are an excellent source of calcium.
Here's the recipe:
350g GF bread flour 100g ground quinoa 1 table spoon of olive oil 1 tea spoon salt 1/2 teaspoon of baking powder 1/2 tea spoon vitamin C powder, 3 free range eggs 1 tea spoon cider vinegar 400ml of Luke warm water with a tea spoon of brown sugar and 2 teaspoons of yeast powder. I add sesame seeds and pumpkin seeds to the mix and I sprinkled more seeds on top. Leave it to prove for approx 30 mins and bake 170C for 25 to 30 mins.
