I made some of these this mornings as its that sort of weather when a nice cuppa and a home made cake go down a treat.
I made them with 55g ground almonds 165g GF self raising flour 165g organic butter 140g soft brown sugar butter 2 free range eggs mixed spice and a tea spoon of cinnamon whizzed up in my food processor put in a muffin tray with flaked almonds and golden linseeds on top, then baked for approx 15 mins 170C.
I soaked the raisins in boiling water and mixed spice so the are plumper and softer and don't sink so easily.

I bet the flavour of your muffins were good, especially as you soaked the fruit. Fruit cakes are also much better when you the fruit.

It's definitely the best thing to do and you can soak it in anything and then add even more flavour to whatever you are making.
Wow, I really like those Muffins - they look amazing. I have copied down the recipe for another time, as I really like the look of them. I bet they were incredibly tasty. Yum!
