I felt like a treat and I've friends visiting so I thought I'd make a nice fruit cake, I used ground almonds with GF white SR flour. I really like raisins and they are a very good source of iron. I also added flaked almonds to the top and golden linseeds as they are nice and crunchy and pack a nutritional punch.
Here's the recipe:
170g Gluten free self raising flour 70g ground almonds 170g organic butter 3 large free range eggs 150g soft brown sugar 150g raisins soaked in boiling water with some mixed spice while I weighed everything else out. I whizzed it up in my food processor and spread it into a large cake tin and baked @ 150C for approx 45 mins. until cooked through.
I do like fruit cake sometimes and I'm trying to put on weight so this seemed a good idea...well I thought so. π
Sounds n looks Delicious, but complicated to make, having to look for the different flours, free range eggs, etc. I'm sure there are similar easier to find items. Thanks for sharing.

I'm a coeliac so have to buy GF four as for pouring some quinoa into a coffee grinder and then pouring it in the scales takes all of a minute.
I used to make my own GF cod in batter and it was easy but if I'd had to go out into the North Sea to catch the cod now that would've stopped me. So I guess its how we perceive things and I look at what I can do...π
I m not meaning to criticize, Im Always looking for new recipes. But I prefer recipes that are simple and minimum ingredients needed. My youngest daughter has a autoimmune disease, she has to be careful what she eats, gluten free foods etc
I think Want2BHappy3 its how we perceive things as this to me is a variation of a simple sponge cake which uses 4 equal amounts of flour sugar fat and eggs and as this is a fruit cake it wants more flour to be denser.
I'm just explaining how I see things as I want to help others bake gluten free successfully. I do add extra's like seeds and substitute ground almonds for flour to give foods an extra nutritional boost but my shelves are well stocked, so its easy for me. π

That cake looks absolutely delicious when I sort my budget I will definatly try this im quite a good cook well I think so ha but Iβm not great at the cake baking shame your not my friend π
Ahh thanks Jerry well if I ever make a cake I will post even if itβs a disaster ive never baked with gf flour or the other ingredients so maybe it will turn out better hereβs hoping π will also have to figure out how to do pic I know you explained but this is about as much techno as I do π€ͺ this emoji really is me ha
