This is what I made with the blackberries I picked the other day. I added them to 4 small bramley apples from my neighbour. I made a crumble mix with ground quinoa and plain gf flour. I also added chia seeds to the apple and blackcurrants as chia seeds absorb a lot of moisture so it makes the fruit thicker and I like that. I also added flaked almonds on top as I think they're great roasted on top of something like this and its a great way of adding a little nutrition here and there as it all adds up.
Here's the recipe, 175g plain gf flour 75g ground quinoa 125g butter 50g Demerara sugar all mixed up thoroughly and then 1/3 spread in the bottom of a pie dish blind baked for about 15 mins before removing from oven and added the apples blackcurrants and chia seeds spread on the base and put the remains on top coat on flaked almonds and bake for approx 25 mins @175C

Looks great Jerry & thanks for the recipe. I would never have thought to use chia seeds, ingenious! I'm going to make this on Sat as we've friends over for lunch but will use ground almonds instead of the quinoa which will hopefully work.
Hey thanks tas1 I'm sure that it will work with ground almonds as its a standard crumble recipe of half fat to flour and half sugar to fat I just prefer to add less sugar. Chia seeds make stewed fruit more like a compote which I really like and they're nutritious.
