Here's a gluten free fruit cake thats a perfect alternative to a Christmas cake with icing and marzipan. To give it extra flavour I use a good quality marmalade to give it extra flavour.
Before I mixed the cake ingredients I put 170g of mixed raisins and sultanas in a little boiling water with some mixed spice and let it soak and when the cake mix was ready I drained and whizzed it all up and put in a cake tin coated in flaked almonds and baked for approx 45 mins 170C
I used 220g self raising GF flour 170g organic butter 3 large free range eggs 120g brown sugar nutmeg 2 desert spoons of orange marmalade with the 170g dried fruit with flaked almonds for the topping.
It's cooling now so I'm looking forward to sampling a slice or two...π

Aw thanks Zest its all natural ingredients so I think if we're fit and active food like this can be part of a balanced diet, especially with a slice in each hand...LOL
This looks out of the world! I will have to try and find some time to do this very soon. May try to do it for a few of the holiday parties that I will be attending in the next few days/weeks this month.
