Here’s a gluten free fruit cake that I made using almond flour and gf flour. Almonds are a great source of nutrients including calcium so by adding almonds and other calcium rich foods we can look after our bone density while we eat. Dried fruit is also a good source of calcium.
Here’s the recipe, 50g ground almonds 250g self raising gluten free flour 250g butter 3 large eggs 150g dried mixed fruit with peel 140g brown sugar 1 tea spoon baking powder and 1/2 teaspoon mixed slice, mix thoroughly before baking at 170C for approx 45 mins until cooked through.
It was still warm when I had a slice so I had it with some custard.
