As it's National Baking Week here's a cake I made today with ground almonds and gluten free SR flour. It's a simple variation of a basic sponge cake by adding 55g ground almonds to it. A basic sponge cake uses 4 equals parts of flour sugar butter and eggs, to make it denser so the fruit didn't sink I added the ground almonds.
Another thing I do is soak the fruit in boiling water with 1/2 teaspoon of brown sugar and some mixed spice, you can whack it in the microwave and the fruit absorbs a lot of the liquid so is softer and bulkier in a couple of minutes. By giving the dried fruit an extra flavour I use less sugar overall in the cake. I put flaked almonds on top as I really like them baked like this.
175g GF self raising flour 175g butter 3 large eggs 155g brown sugar 175g dried fruit and cherries 55g ground almonds with 1/2 tea spoon mixed spice, baked for about 45/50 mins @160C until cooked through.

Oh I hope you do a Ginger cake sometime, as I am not likely to make mine till Christmastime - as it's quite a rich one, and I thought it would be suitable for the festive period!
