If I'm going to eat cakes I like cakes that have fruit in them and today I made this cherry and mixed dried fruit cake.
Here's the recipe, 225g self raising gluten free flour 170g butter 3 free range eggs 150g golden granulated sugar 120g mixed dried fruit with peel 75g cherries 1/2 teaspoon mixed spice. Mix thoroughly adding the fruit last spread in a greased cake tin I used a loaf tin and bake until cooked through approx 35 mins @160C
Cakes like this are perfect for afternoon tea...π
Your fruit cake came out looking really lovely. It reminds me of panettone which I dearly miss eating from my healthy youthful days that allowed me to enjoy gluten . Merci for the recipe .
That sounds good Jerry, once I have all the chutneys done, I can think about cakes again. My kitchen resembles a pickle factory just now. Hilda Baker and her watch with one hand came to mind after I kept looking at my wrist for a watch, I hadn't put on!!

Yes it's really nice to have the recipes. I have no need to eat gluten-free but you cakes always look and taste so yummy that I often follow them to the letter, though I have successfully adapted them to use with regular flour too. πππ°π§
