Home made gluten free cherry and almond cake...πŸ’

β€’7 Replies

Hi everyone,

Here's a gluten free fruit cake I made and to up my plant intake I used cherries as I was low on currants I also added flaked almonds and chia seeds to top it.

I make it like a sponge with extra flour so instead of using 125g of flour use 175g which makes it denser so the fruit doesn't sink, I also soak fruit sometimes and that helps to stop it sinking.

I had a slice after walking 9407 steps and 4.5 miles in the forest this afternoon and enjoyed it with a nice cup of tea...😊

Here's a photo I took in the forest:

Hi Jerry

Your Homemade Gluten Free Cherry & Almond Cake looks AMAZING. I would love a slice of that. :-) Good tip with the denser flour to stop the cherries sinking. Great that you enjoyed your walk in the forest, and I am looking forward to taking a look at your photo that you took whilst there.

Zest :-)

Hey thanks Ali you're a nifty baker yourself in my opinion so a great compliment, it's funny how talking about chocolate and cake makes us want some. πŸ˜€
