Here's a simple dish that I really like and make lots of variations of, today I used strong cheddar cheese with 2 free range eggs onion garlic baby plum tomatoes with sliced organic mushrooms on top, I really like mushrooms crispy on the outside I seasoned with black pepper and a little parsley. I baked it until is was going golden on top. I had it with a big salad and it went down a treat.
I also love this when its cold so it's great for away from home and as its gluten free its a great option. 😊
