Good evening everyone, well as we've had a theme on eating left overs I made a batch of batter last night for some fruit pancakes and had plenty left for tonight. So its more pancakes from me LOL. They're made with quinoa flour and chia seeds so are healthy and gluten free.
I cooked red onions diced with button chestnut mushrooms and garlic and I seasoned with cumin, coriander and ginger and when they were cooked I spread a thick layer onto the pancakes rolled them and gently baked to let the Feta melt and the tanginess of the Feta complimented the filling just right. I had some left over veggies from yesterday so that turned these into a perfect meal.
This is a really easy to make and would be great for a packed lunch/picnic.
