Good evening folks, tonight I had a home made quiche with a sweet potato and white potato base with a quiche filling of white onion, garlic, sweet pepper, baby chestnut mushrooms, and for the quiche I used 2 free range eggs and and equal amount of milk I used Arla lactose free semi skimmed milk and strong cheddar cheese with a sliced vine tomato on top.
I cooked the potatoes and mashed them together and spread them in a dish and blind baked with a little butter while I made the quiche and I gently cooked the veg in olive oil to soften then I took the base out of the oven added the veg the quiche mix and topped with toms and straight back in the oven. Its easier than making pastry and it's gluten free.
I had it with some green beans. This is great cold as it slices really well so is great for packed lunches and picnicβs weather permitting...

Looks delicious Jerry. Iβve also made a potato based quiche today, as Iβm out for the day tomorrow. Itβs the first time Iβve made it, so hoping that it will come out of the dish ok!
