My next door neighbours are on holiday and I'm looking after their chicken, which are an interesting breed as the shells are blue. So these eggs are not only free range but very fresh and here's how I cooked one this morning.
I had it with home made gluten free bread toasted a large baked vine tomato and some baby chestnut mushrooms gently cooked in olive oil.
I sprinkled a little fresh parsley on top and enjoyed it very much.π
Looks absolutely delicious and must be the most ethical eggs going! I have bought eggs with pastel coloured shells and I think they are certain breeds that produce them - very pretty and very tasty. βΊ
