Low carb vegetable cheesy bake with crispy baby parsnips

Hi everyone, here's what I made for my evening meal tonight, its locally grown vegetables cooked in a cheese sauce, cauliflower mushrooms and baby tomatoes with crispy baby parsnips which I really like.

It is interesting as Matt posted about saturated fats and I used whole milk (goats) butter and strong cheddar cheese as they are all saturated fats but still natural wholesome foods in my world, there is also a lot of interest in low carb meals and I love meals like this, it is also gluten free and vegetarian. 😊

Wow! :-) Your meal looks great and it's nice to know that it is low carb/gluten free. :-) How long did it take to do?

Hey thanks Leah, it took just under 1/2 hour from cupboard to plate, I used gram flour to thicken the roux as well so its grain free. 😊

Thanks, I shall have to try them. I don't think I've ever tried the 'baby parsnips' - you have cooked them to perfection - they look great!

Hey thanks Ali, I love roasts and roast parsnips and these are small so I gently cooked them in a marble coated pan as you use very little oil and cook gently on a low heat, I've bought some more I liked them so much. 😁

Sounds great. Oh I hadn’t realised what those marble pans were. I thought it was just Teflon with a different finish but I’ve just looked it up and now I know πŸ™„

So do you find that pan good?

I'm very impressed and I usually buy stainless but saw these, it's best to use a low heat, which's a great way of cooking things. 😊

Yes Hidden I eat whole foods which includes some saturated fat. I also posted this on DRWF for their new recipe section so I purposely made an LCHF meal as there's a lot of interest in that and I'm honest about what I eat and see as healthy.

I'm a coeliac and normally eat carbs as I am lean and fit and my cholesterol levels are really good and my BMI is 20.

So yup I eat natural saturated fats. 😊

Well as long as you don't eat to many of them I'm sure you will be OK πŸ‘
